How do you guys do boiled peanuts? I never get them right the first time. I got some outstanding Virgina Peanuts today, big old peanuts. Anyways, I always cook them the first night, and they arent any good, I put them in the fridge overnight, and I have to redo them a second night with more salt and about 6 more hours of boiling when I get home from work the next night?

What would you do for about a 3 gallon pot, maybe 5 lbs of peanuts. I like to fill the pot when I make them, however much that is. How much salt, how rapid of a boil, how long to boil? I will get this batch right eventually, but sure wish I knew how to do them right the first time. Thanks.
