OK, here is what I do. Correct in using only larger peanuts.Green nuts work much better than older ones. I buy sea salt,a bit more expensive than table salt, but works way better.I would start boiling peanuts, add about a pound of salt, usually boil for about 3 hours,adding salt as I go along.Not a roaring boil, but more than simmering. Stir often. After about 3 hours, turn fire off. Leave them in water, and allow to cool for several hours, then warm them back up without boiling again. As they cool in the water, the nuts absorb the salt. Do not refrigerate. If , after they cool, not salty enough, repeat boiling with more salt for another hour. For 5 pounds, in a pot, I am guessing about total of about 2 pounds of salt.I also flavor them cajun style by adding crab boil,Old Bay, or any other seasoning. Have seen folks add hot sauce, even beer, to water, but I prefer plain salt.
