Eastern Washington | Potato's will stay good a long time in the ground as long as the temp is not to hot and not to cold. Hawken above has it pretty good. Each 100#'s of potato's will produce about 7 btu's per day so ventilation is required. Depending on variety sugers can start forming at about 45 degree's. Processing potato's are usually held above this because of this. Fresh pack potato's are held down to 40 or so as the sugars don't make as much difference. Cool, dark, with good releative humidity, and some air exchange is good. | |
