| I agree with Judythe's method. Rub all the dirt off that you can without damaging the skin. The main thing is do not wash them. I don't believe potatoes keep as well if you wash them. (IMO, same applies to eggs)
I have large wire baskets like shopping carts that I stored potatoes in the root cellar. Better than burlap sacks because it allowed air flow and does not retain excessive moisture. Dark, cool, and dry storage conditions is what you are trying to maintain.
Another thing is to remove any damaged or scabby potatoes and use them up first. Don't store them in and among undamage potatoes because of the principle that a bad apple spoils the whole barrel. | |
