Jake the guy that spayed my sidewalls wouldn't spray "under roof" on a wood frame building. Said they used to do it until condensation caught up to them and rotted out the "stringer" or "perlins".

If I was doing mine over I'd do like he did on his own shop, they put in the ceiling and then foamed on top of that(make a heck of a vapor barrier) and you'd never have to worry about insulation getting wet.

I'd say the only drawback I set with faom is if your ever going to modify/addon the building it might be a bit more challenging--loran
