Subject: Frame mounted NIR camera vs Gimbal for stitching

I have a Phantom 4 with a NIR camera from Sentera and the factory camera on the gimbal. I'm having trouble getting quality stitched photos on drone deploy.

It seems on the ends where it turns around and has a road or treeline I will get good stitched photos but I'm struggling to get good stitching in the middle of the fields. About 200 feet in the from the ends it will usually turn blurry and appear inaccurate. I've tried flights between 240 and 400ft with overlaps between 50 to 80% and keep getting inconsistent results. I was wondering if the fixed camera on Phantom 4 is throwing off the images because the angle of travel and not taking a picture directly down then coming back on the next pass at a opposite angle is throwing off the stitching process. Has anyone else experienced this or know what I am doing wrong?
