Defaults are best option to start with.
Try keeping camera pointing down a bit to expose more for land than sky.
It will never be particularly good pointing towards the sun so try to avoid that unless intending a contra-jour style shot.

The camera is actually pretty good for the size, don't forget it's a $100 camera on a $600 drone.
To get the best from it in less than optimum lighting, you often need a bit of processing time - video and photo.
