| Gas is preferred by the serious cooks because of better temp control. Also heats up faster. I had gas in a previous home and really liked it. I now have an electric smooth top that is about 15 years old and have NEVER had a problem with it. You are right that the pans have to be flat, but since I started using all clad I have no problem with that. Cleanup is a snap on these. That being said, if I were starting over in a new kitchen, I would still seriously consider gas again. Hmmm, maybe a nice big Viking! | |
