We had electric range, actually counter top stove & a wall oven for our personal kitchen & gas ranges for the catering business. We remodeled our home kitchen about 7 years ago & put in a dual fuel range. Cook top is gas burners & oven is an electric convection. Advantage to the gas cook top is you have instant heat, no waiting for a burner to warm up and when you turn the heat down or off it does so instantly, no waiting for it to cool down. Convection oven is great for baking meats & such. especially larger portions and the electric heat is more even. Also the forced air helps bake things quicker, usually can bake something in 2/3 - 3/4 the time it would take to bake normally.. Downfall to cnvection ovens is they aren't the best for baking cakes & such. The forced air doesn't allow the cakes to rise as they should. Most home convection ovens have a normal baking function & a convection function.
