I rinse the beans, always sort out the rocks & bad beans cause that's what Mom did...2 cups makes enough for us. 6 cups of water, salt & pepper to taste, salt depends on how salty the ham is. A tbsp of minced garlic, & about that much dried onion flakes, or cut up some fresh onion.
That's about it, throw in the hock in & let it cook...as John said it's a little trouble to separate the bones & gristle when it's done.
Pintos are my favorite, I was raised on them, but I have done it with other beans, my wife has Minnesota roots, so she likes Great Northerns...:) only thing that didn't work real well was mixing black beans & white, the blacks dyed the whites kind of an unappetizing gray...
