Quality of bacon probabley plays a role too.
Somehow when we cook bacon from my sons extra fair pig, fed feed similar to what a commercial hog would eat the bacon stays pretty close to the same size. You buy a package of Oscar Meyer or Hormel and fry it up and it's half the size.
