Subject: Gallbladder

Pittsburg, Kansas
My wife likes it a little crisper than I do. That means more of the fat rendered out.

There is one good reason for that. She has had her gallbladder removed. She can't get the same bolus of bile that I can to handle digestion of the fat. Too much all at once can send her to the bathroom with unpleasant results.

A person without a gallbladder puts out the same amount of bile from the liver as a person with one. The difference is the bladder can store it up and bolus it out as demanded by the fat sensors in the digestive tract.

She usually saves the grease to cook with, so rarely wasted.
