Subject: RE: Wrapping meat

Missouri

It's great in theory, but my customers want paper back.

I've tried 3 different butchers and none of them can keep bone from poking holes in the plastic they vacuum pack with. Two of them lay pieces of plastic on the bone before they pack, and it's still happening. I assume it's happening during transport and handling, but there's nothing I can really do about that. The wait time on the good butcher who knows how to wrap paper is killing me.
