I spoke with a butcher that vacuum seals and then wraps in paper. I asked why take that extra time and incur the extra cost . . .thinking that he'd say it provides protection against seal failures, but he said it is just because his customers like the look of paper-wrapped cuts. Did not make sense to me, but that is what he said.
