My Grandfather used to make scrapple in the early 1900's as Did his Father before him. in the 1800's.
When butchering hogs, and they butchered numerous at a time, they had a pot of boiling water and corn meal off to the side. Then all the scraps would go into the pot.
To cook it you put in the frying pan and let the scrapple burn so you could get a spatula under the meat.
After cooking on both sides he would make gravy with the grease and burned scraps.
Went good with eggs, or pancakes, or biscuits.
