| My wife has two convection ovens, and another that has "speed bake" which is similiar. Normally, things can be baked in a convection oven at a lower temperature and faster than in a conventional oven. Some things donot cook as well on convection a s they do under a normal baking. My wife never bakes cakes on convection, says they don'trise as well when baked on convection. Meats cook great on "convection" and seem to come out more tender & moist. You can also cook larger quantities in a convection oven without having to rotate though she normally rotates when baking two or more pans of something at the same tme. Most "home" convection ovens have the convection"" & "normal" bake settings so you can choose the best method of baking . She prefers here electric gas convection oven sover the gas, says it bakes more even. Her favorite is her "dual fuel" range, cook top is gas, with electric convection oven.
