Palestine, IL 62451 | Just like this for about 12 hrs. I put some rub of choice (usually different every time) on and set for 1-2 hrs put it on and let it go, after about 8 hrs wrap in foil or cellophane (with holes to allow drainage) and keep on trucking to 200 degrees, put in cooler for awhile to rest ,pull add some sauce and serve.
