NW Washington | If you don't own a smoker you can put it on a regular gas or charcoal grill using indirect heat and some smoke wood for an hour and a half or two, turning it once, after rubbing it down with your favorite BBQ dry rub. Then pull it off the grill and put it in a roaster pan with a rack, seal the top of the roaster with a good foil wrap and stick it in the oven for about 3 hours at 275 or 300 degrees. Let it rest for about a half an hour and them pull it apart. Serve with your favorite bbq sauce. | |
