They use infrared heat or actually it's radiant heat like a tube heater in a shop has. The radiant heat heats the meat but not the air around it so it's not drying the meat out as it cooks. I've got a Charbroil Infrared grill and a Charbroil Big Easy smoker/roaster/grill which is their new version of the oil less turkey frier and they both turn out amazing meat.
