Below are some IR pictures I took back in the late 1970's.
I'm not going to totally disagree with you, because I claim one can draw a relative yield map (underline relative) on a field when quality visual spectrum images are taken in the early stages.
With above said, When we get out past 700 nanometers - say 1200- 14,000 they are certainly getting more information than what exists in the VS.
This extra information (by the slice in the EMS) combined with proper algorithms, will provide diagnostics not achievable with VS alone.
Many universities have and are proving this. As with all technology - the price will come down with supply
