Hillsboro, TN | Did you brine the brisket yourself or buy a store bought corned beef brisket?
My wife usually buys Groebels (sp?) Brand corned beef brisket here locally. It seems quality results can vary greatly. She cooks it in a crock pot, on low, all day. Sometimes it turns out firm but tender, sometimes fall apart tender, and sometimes firm and tough. Sometimes, like you say, there is a thick fatty layer through it. I've just chalked it up to variations in the cut itself. I've looked into brining a brisket at home but haven't tried it yet.
When it turns out right, corned beef is one of my family's favorite meals. We usually accompany it with stewed potatoes, carrots, fried (or boiled) cabbage and cornbread. Rarely do we have any leftovers. She usually cooks that meal about once every six weeks or so. | |
