Blooming where I am planted! | In the summer, cover the roast with thick slabs of sliced ripe beefsteak tomatoes. The tomato flavor bakes into the roast and gives a wonderful taste! Also, impregnate the roast with freshly sliced garlic (not the stuff you get in a jar). You can do this by delving the knife into the roast to make a space for the slivers of garlic, and then just push the slivers in. My mom did this and there was a piece of garlic every inch or two or so. Yum! Between that and the tomatoes, your taste buds will be happy! |
