250 degrees for most of the day, that's pretty much what I do. If I have a branding crew to cook dinner for, I usually put the roast in the oven about 4AM and check to see how it's doing mid-morning. I will add some water at that time if necessary. I usually have baby carrots, whole potatoes with skin on, and quartered onions added to the roast.
