Rump roasts get slit and stuffed with Garlic and Rosemary, then shoved in the oven on the bare rack fat side up for 15 Min.@450 to sear, then however long it takes at 350 to get internal temp to 135. Let sit covered in foil for 15 Min. Sliced thin with mashed Taters and Asparagus is my favorite, but add some Vidalias and green peppers it's sandwich heaven.
