As pointed out, shattering is a varietal trait which may be amplified with stressors. If 90% of the pods are breaking open easily, I think I would give them a go with the combine, which is probably the only true way to find if their ready. If you are seeing more shattering now (and you probably will) you may want to take them if at all possible. If you can thresh them all out of the pods 14% moisture seems to be a benchmark, I would prefer 11-12 if going in a steel bin with no air, you should be able to go to 16% with a bin with perforated flooring and a decent sized fan (something you could air dry corn in).
Beans do not seem to mature as evenly here as they did 20 years ago, it is not uncommon to have some big greenies and green pods in the sample and straw that looks like green chop exiting the straw chopper.
Bottom line, the shatter loss will only increase, take them as soon as you can put most of them in the tank and store them safely. Hope this helps.
