Im sure there's some wiggle room, like you say, eggs come in different sizes so what does a recipe calling for 4 eggs really mean? Unless is specifically says small, medium, large etc. The other alternative is to make the batch size based on the 'eggs'... Its easy to adjust the volumes/weights of liquids, or solids. So you might end up with a .8 or 1.1 gal batch.
