The amount of insurance you take is somewhat based of your comfort level with risk.
Personally, I try to cover my input costs with crop insurance. I don't think the complicated schemes some use to try and guarantee a profit with insurance should even be available.
ETA: If you have ever farmed in 5 different years in the past, including livestock, you aren’t eligible for the discounts for beginning farmers.
