Try this:

Quick and Easy Applesauce

20 large apples, Macs, Royal Gala, or whatever you have
2 cups water
1 1/3 cup white sugar
2 tbsp lemon juice
1 tsp ground allspice
2 tsp ground cinnamon

Peel, core and coarsely chop apples and place in a large saucepan. Add the rest of the ingredients and cook over medium heat, stirring for about half and hour or until apples soften and fall apart or can be easily mashed with a fork. (potato masher works too). Makes 24 cups

I have scorched applesauce before, so use a heavy bottomed pan, and stir frequently. Spices are optional, and so is the lemon juice.

One year when we were young and poor, we picked all the apples along the fencerows we could find. We had every kind of apple in the mix, and it made wonderful applesauce. I ended up canning 80 quarts of applesauce that year, and it was good. We still chuckle over the memory.
