I do the same: wash, quarter, core, cook (with just a little water), and run them through the Foley mill. No sugar, no nothing, the peels have pectin in them to thicken the 'sauce and there's just enough natural sugar in it to keep it sweet. I freeze. Seems to keep the texture better.
