Just a knife and a big pot, really.  I do the same as my mom did, just peel the apples and chop them up, cook them in a big pot with a little water.  You can start cooking right away.  Some of the apples will cook down into a mash all by themselves, and the others you add later will cook but stay chunky.  That makes a nice chunky applesauce.  I tend not to add sugar at all.  I usually divide the batch in half and leave half plain, and add some cinnamon and nutmeg to the other half.
