Hi Ron. If I had some tough steaks to deal with I would sous vide them. If you already have an Instant Pot you're well equipped. A vac sealer would come in handy but it is not a necessity. You can also use a Zip Lock freezer bag. Anova and Youtube have tons of recipes. Good Luck
