Never had sheepshead so I know nothing about it, but I thought most any fish can be pickled. Local guy that I let pick elderberries dropped off a jar of pickled northern last year and pickled lake trout this year. I would have thought the lake trout might be too delicate of a flesh but it was firm like any northern I've had.

edit to add; Found a link to this pickled recipe that had mentioned drum/sheapshead. Might be worth a try even though the video uses tilapia.
