Local guy that I let pick elderberries dropped off a jar of pickled lake trout this year. I would have thought the lake trout might be too delicate of a flesh but it was firm like any northern I've had.
Was this local some sort of criminal? Pickling lake trout? That sounds about a ridiculous as pickling walleye.
