Sheepshead fish

Back when I freshwater spear fished (scuba and skin diving) in competition (82-84) we were allowed to shoot rough fish only. Mostly carp, but also sucker, shad, buffalo and drum. (No game fish like bass or bluegill).

We never ate any of the drum but were told they were the best. Wife did pressure can some carp and it was ok. Kind of like canned tuna.

But at weigh in time of the competition the fish were all iced down in 55 gallon drums. Some gentlemen from Kansas City took them supposedly for his church to distribute. So someone was eating them.

So if drum fish is what you are calling sheepshead. I have heard they are supposed to be better than carp, for what that is worth. No help on preparing.
