My mother boiled tongue and we sliced it to eat, sometimes in sandwiches. She used to cook heart by baking it in the oven. I never really liked it like that. At some point someone told her to run the heart thru a meat tenderizer and fix it like cubed steak. That worked really well and tasted pretty much the same as cubed steak.
