I smoked a deer heart for about 6 hours last weekend while smoking some ribs.....I sliced it into 1/4 thick strips and it turned out very nice....I was very surprised and will be saving all the hearts this year. Of course my kids baulked at the idea of actually eating a bite.....but they got past it with a little encouragement and they too enjoyed it.
