Glad you took the time to type that all out. Good explanation of your experience.

I would only make two comments.

I have heard from the carnivore community to not under eat in the beginning. Eat all you want till full. Till it no longer tastes good. Some people are ravenously hungry starting out. The reduction in amount eaten will happen naturally as one gets fat adapted. No personal experience here as I mostly transitioned slowly from low carb. And I had some carbs last night at a St Patrick's Day celebration. So not strict carnivore at all.

Second, a person may need to up the amount of salt they use from the salt shaker. Low electrolytes will make a person feel crappy. There is a lot of salt in boxed processed foods. A person going carnivore may accidentally lower their salt consumption by the diet change without realizing it.
