It is what we ate as far as ancestrally eaten fats. It is what we evolved from or as we were created. It is the healthy fat contrary to we have been told for the last 50 years.

Animal fat will not make a person fat unless they eat it with carbohydrates. Eating carbohydrates raises insulin. Raised insulin puts the person into glucose burning mode and out of fat burning mode. So in that case fat can be a part of body fat accumulation because insulin signals energy abundance and send any excess energy to fat storage.

Animal fat eaten with animal protein, like it comes in nature, will generally not make a person accumulate body fat. The reason is satiety will kick in before a person over consumes and causes a person to stop eating. Meat and animal fat have very high satiety. Hard to over eat them by themselves. Some exceptions could be high calorie products like cheese that have a lot of fat energy but low satiety. A person might have to limit the consumption of those. Not so much with animal meat.

My wife has cooked stuff pretty much exclusively for the last 5 years in bacon grease and butter. Lard, beef tallow and gee would be excellent also.
