The only way that 100 (commercial) cows could be "full time" is if you're trying for it to be a full time job.
Even in dry lot, feeding them with buckets and small square bales, you would have a hard time turning 100 stock cows into a job that takes 2000+ hours.
Now on the risk/reward topic, you're 100% spot on. The profit on a cow calf operation is no get rich quick scheme considering the $'s and time invested.
